Tempura di pesce e verdure



Il tempura è un piatto tipico della cucina giapponese che consiste in verdure e pesce avvolti in una croccante e leggera pastella.

I segreti per cucinare una buona tempura sono tre:

  1. Usare acqua ghiacciata (ancora meglio se frizzante), con qualche cubetto di ghiaccio.

  2. Mescolare poco la farina con l'acqua ghiacciata. Devono rimanere molte bolle inesplose di farina. Mai fare una pastella omogenea.

  3. Friggere in tanto olio a circa 175 °C - 180 °C in una padella alta pochi pezzi per volta, così da mantenere la temperatura dell'olio costante.

Ingredienti / Ingredients:

Preparazione / Preparation:

Tagliate le verdure a bastoncini. Sbattete un uovo, mescolatevi lentamente l'acqua ghiacciata e la farina, e lavorate solo il necessario per amalgamare il tutto. Immergetevi subito il pesce e le verdure. La pastella deve essere freddissima perché solo cosi, a contatto con l'olio caldo, formerà la crosticina croccante. Friggete pochi pezzi per volta.
